The following is an easy-to-make and nutritious recipe featured on Dietitian’s Corner.
Crock Pot White Chicken Chili
(This serves 4 to 6 people)
32 ounces low-sodium chicken broth.
16 ounces of boneless chicken breasts.
1 15-ounce can cannellini beans.
1 15-ounce can of no-salt added black beans.
16 ounces of salsa verde
2 tsps. ground cumin
2-3 Tbsp. of corn starch.
Directions:
In a crockpot, add chicken broth, chicken breasts, beans, salsa, cumin and corn starch. Stir to combine.
Cook on high for four hours or on low for six hours until chicken is cooked through. Remove chicken pieces and shred them with a fork.
Add back to the chili.
Serve topped with one or more of the following: chopped cilantro, shredded cheese, chopped green onions, crumbled tortilla chips, sour cream, chopped Roma tomatoes, avocado chunks and more.
Dietitian’s Tips:
• Serve the chili with whole-grain bread and a piece of fresh fruit.
• Drain and rinse under water the canned beans to remove up to 41 percent of the sodium, even if you purchased the no-salt added varieties.
