Sour Dough Rye, fermenting water sweetness, sugar and yeast kept trapped under a clear cellophane covering in a pint jar. Yeast kept active for days by uncovering adding and smelling the sour smell that lends and permeates the starter. An afterthought something forgotten on a long journey of discovery, left to be tended at a later time.
Game Day is here. Guest are coming, America’s winter past time is neigh upon us. Regional teams to be jeered or cheered, Food to be prepared and consumed-and so what if there is extra, a tailgated relaxed open house around the comfy confines of the entertainment center in your home. The morning chill forgotten as the bowl is placed upon the counter, a long handled spatula, a measuring cup filled with water set in the microwave for 90 seconds, the yeast jar found in the frig. Warmed water poured into the oversized bowl the yeast jar sprinkled over the warm water, the molasses poured from the jar into the center of the living mixture. One, two, three, sifted flour, one part all purpose two parts rye. An extension of your strength and purpose a spatula is sliding down under the water bringing the flour into the yeasted water molasses feeding the living organism.
A workout to be sure until all the dry is incorporated into the sponge, the final effort 100 strokes and then a well deserved rest. But before you sit gather together salt, olive oil, dill seed, dill, caraway seeds sunflower seeds shelled.
Half time is over time to get flavor town involved in the hospitality train. Pouring the olive oil into the center a cenote is formed and a landscape of salt and seeds, sour dough mixture to follow. Mix again like we did all summer. Yeah baby! Add remaining sifted flour only all purpose now to a sticky to touch dough, pour enough vegetable oil to cover dough, a slight amount not too much oil, turning once in bowl and rest again until the sour dough rye is doubled in size.
Turn out onto floured counter, with dough scraper, kneed like its for fun. form loaves, baguettes any which way you like, its your football party!
